These savory potato waffles taste wonderful, plus they are versatile, fat-free, satisfying, and easy to customize to your liking. Enjoy them with the topping options included in the recipe or choose your own favorites. You can also use the waffles as open toast sandwiches or use two waffles with fillings between for a waffle sandwich. The choice is yours!
Frequently labeled as a “white” food that’s devoid of nutrition, potatoes are actually one of the most powerful anti-EBV foods. High in lysine, they also contain tyrosine, a chemical needed to produce thyroid hormones.
Savory Potato Waffles
Ingredients:
2 lbs potatoes, peeled and roughly chopped
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1 tbsp chopped dill (optional)
1/4 cup finely chopped spring onion (optional)
Topping options:
2 cups chopped crimini or portabellini mushrooms (or other mushroom of choice)
2 tbsp chopped fresh herbs, such as parsley, cilantro, thyme, and/or oregano
1/2 tsp lemon juice
1/4 cup thinly sliced cucumber
2 tbsp thinly sliced spring onions
1/4 cup halved cherry tomatoes
1/2-1 tbsp hot sauce
Directions:
Place the potatoes in steamer or colander set over a pan of boiling water. Cover with a lid and steam for 20 minutes or until tender when pierced with a fork. Remove and cool completely.
Add the potatoes to a mixing bowl and mash with a potato masher until lump-free.
Add the garlic powder, onion powder, paprika, dill, and spring onion to the bowl and stir until evenly mixed.
Heat a non-stick ceramic waffle machine to high heat. Add the mashed potato mixture until the base of the waffle machine is evenly covered, then close the machine and cook until the waffle is crispy, about 10-15 minutes. Repeat with rest of the mixture.
To make the mushrooms, heat a non-stick ceramic skillet to medium-high heat and add the mushrooms together with a bit of water to prevent sticking. Cook for 5-6 minutes, until the mushrooms are soft, then remove from heat and stir in herbs and lemon juice.
Serve waffles with desired toppings, such as the mushrooms, thinly sliced cucumber, spring onions, cherry tomatoes and hot sauce. Alternatively, you can use the waffles like bread to make sandwiches.
